Whipped feta has become popular – no doubt for how easy it is to make while being deliciously tangy, salty and creamy. I first came across this spread to pair with honey harrissa carrots and then to accompany braised leaks. Both were amazing plates…and caused me to tuck away this simple base in my recipe collection.
Experimenting further with the addition of beets, it brought a sweet earthiness that was complemented the feta and yogurt so well.
Using cooked beets, it could not be quicker to make this spread. All you need is a blender or food processor to quite literally whip this up and to budget less than ten minutes all in.
This recipe yields enough for four people as an appetizer. That said, I almost inhaled the first batch with baguette pictured there because it was so tasty.
This spread could be an impressive no-effort starter that adds some fantastic and bold colour to your table at a dinner party or be thrown into a picnic basket beside some hummus, crackers, flatbread, raw vegetables. Beyond that though, this could very easily serve as a component to a more elaborate dish like the ones linked above.
Beet Whipped Feta Spread
Ingredients
200 g feta
3 heaping tablespoons 10% Greek yogurt
1/4 cup olive oil
3 – 4 cooked beets
Directions
- Crumble the feta into the blender/food processor
- Add yogurt, olive oil and beets to taste
- Blend until smooth
