Japanese Style Carrot Ginger Dressing

I was thrilled to find out I could make this a version of this salad dressing at home after trying it at some of my favourite sushi restaurants in Toronto.

This sweet yet tangy dressing recipe is adapted from Pickled Plum and pairs well with iceberg lettuce or other similar leaves.

Japanese Style Carrot Ginger Dressing

Ingredients

  • 2 large carrots

  • 1 small onion

  • 2 inches of ginger

  • 1/4 cup of soy sauce

  • 1/2 cup of rice vinegar or apple cider vinegar

  • 1 tablespoon of brown sugar

  • 1 teaspoon of salt

  • Lemon juice to taste

Directions

  • Peel and chop carrots and onion into large pieces
  • Combine everything in a food processor and blend until smooth
