This simple weekend brunch is satisfying for its speed. I started making this when I lived in Nice and could readily buy baguettes. The leftovers the next day became an easy but complete brunch with the help of some berries, crème fraîche or yogurt and honey.
Leftover Baguette French Toast with Honey Crème Fraîche and Berry Compote
Ingredients
Baguette or your choice of bread
Eggs
Crème fraîche
Honey
Frozen berries
Lemon juice
Vanilla sugar
Directions
- Slice leftover baguette into rounds
- In a shallow bowl, whisk eggs
- Dip rounds into the egg mixture and set aside
- Heat a non-stick pan to medium-high heat and coat with olive oil and a small knob of butter
- Fry toast until golden brown
- For the compote, add frozen berries, lemon juice, a splash of water and vanilla sugar to a small saucepan and simmer until a desired thickness
- For the cream, mix ½ cup of creme fraiche with a generous teaspoon of honey or to taste.
